GF PB&J Cookies

Made these cookies yesterday and they were just so good I had to share the recipe.

I had plans to hang with a friend at the river, and texting the night before I mentioned I would make him some gluten free PB cookies for his b-day (plus river snax). I completely spaced on the cookies until the next day when he texted me “on my way”. I frantically threw them together and by the time he walked in the door 30 minutes later they were cooled.

So basically it’s the perfect recipe for fellow bird brains (no offense to all the smart birds out there) who forget they’ve promised a yummy snack until the last minute!

For these cookies you’ll need ~
2 eggs
1 cup PB
1/2 cup sugar
1/4 cup of Bob’s GF 1:1 flour or whatever brand you’d prefer. You could also sub for 2 tablespoons of coconut flour.
1 teaspoon of vanilla
1 teaspoon of coriander (if you don’t own this spice please do yourself favor and buy it and use on everything)
Pinch of salt – depending on saltiness of PB
Your choice of jam

Mix everything together. Plop little blobs out onto a baking sheet and create a criss cross pattern with a fork, because for some reason thats the PB cookie pattern. Use your thumb to create little well in the middle of each cookie. Plop a teaspoon or so of jam in each cookie. Bake for 15 mins @350, rotating pan halfway through for even bake. Let them cool a bit to firm up before transferring them off of baking sheet!

Makes about 12 cookies!
